Florida stone crab claws are Florida’s greatest seafood delicacy. Stone crabs are trapped off the shores of the Florida Keys, the southern tip of Florida, and the Southern portion of the West Coast of Florida in 60-80 foot depths. Only claw with a forearm(s) no less than 2 ¾ inches long can be taken and the crab is returned to the water to regenerate a replacement(s). The Florida Stone Crab season runs from October 15th thru May 15th. Monty’s serves Jonah Stone Crab claws from May 16th thru October 14th. These crabs are harvested off the New England coastline. The Jonah crab has a vegetarian diet and is considered to be both low in cholesterol and calories. Their flavor has been compared to lobster or Dungeness crab of the North Pacific.
